Multigrain Super Pancakes Recipe
Prep time: 5 minutes
Cook time: 15 minutes
Servings: 6 pancakes
Ingredients
• 1 cup Atta4Europe™ Multigrain Flour
• 1 tbsp sugar
• 1/2 tsp baking powder
• 1/4 tsp baking soda
• 1/2 tsp cinnamon
• Pinch of salt (optional)
• 1 cup milk
• 8 drops lemon juice (mixed into the milk)
• 1 large egg
• 2 tbsp melted butter
Instructions
1. Prepare the milk mixture
Mix the milk with lemon juice and leave it for 2–3 minutes. This creates a simple buttermilk-style mixture that helps give the pancakes their soft and fluffy texture.
2. Mix the dry ingredients
In a large bowl, combine Atta4Europe Multigrain Flour, sugar, baking powder, baking soda, cinnamon and salt.
3. Add the wet ingredients
Add the egg and melted butter to the milk mixture and whisk until combined.
4. Make the batter
Pour the wet ingredients into the dry ingredients and gently mix until combined. Avoid overmixing — a few small lumps are perfectly fine and help keep the pancakes soft.
5. Cook the pancakes
Heat a lightly greased pan over medium heat. Pour the batter onto the pan and cook until bubbles appear on the surface. Flip and cook the other side until golden.
6. Serve and enjoy
Serve warm with your favourite toppings — maple syrup, yoghurt, fresh berries, nuts or seasonal fruits.
Tips for Perfect Multigrain Pancakes
• Let the batter rest briefly before cooking to allow the flour to absorb the liquid.
• Cook on medium heat as multigrain flour can brown slightly faster than regular flour.
• Avoid pressing pancakes with a spatula to keep them fluffy.
• Make extra and freeze for a quick breakfast option.
